HACCP Certification in Kenya: What Buyers Actually Check

Every exporter we work with has a HACCP manual. Far fewer have a HACCP system. The difference shows up in the first hour of an audit, when the auditor walks to the metal detector and asks the operator to explain what happens when it rejects a pack.

This guide sets out what buyers and certification bodies in Kenya actually check, and how to prepare a packhouse, mill, dairy or processing plant to pass without last-minute panic.

Start with prerequisite programmes, not paperwork

HACCP only works on top of solid prerequisite programmes. If cleaning schedules, pest control, water testing and personnel hygiene are weak, hazard analysis becomes theoretical.

Auditors sample prerequisites first because they are visible: hand-wash stations, glass and hard plastic registers, chemical storage, waste flow and staff behaviour tell the story before any document is opened.

  • Documented cleaning schedules with verification, not just signatures
  • Potable water testing at a frequency justified by risk
  • Pest control records reviewed by a competent person
  • Calibration records for thermometers, scales and metal detectors

Hazard analysis must reflect your process, not a template

A hazard analysis copied from another company is the fastest route to a major non-conformity. Your process flow diagram must be verified on the floor and dated, and each step must carry biological, chemical, physical and allergen hazards relevant to your product.

For Kenyan horticulture, pesticide residue exceedance is the chemical hazard most often underestimated. It belongs in your analysis with a defined control, usually at the incoming produce or pre-harvest interval verification step.

Critical control points need monitoring people can perform

A critical limit that operators cannot check every hour is not a control. Keep CCPs few, measurable and owned by named roles, with corrective action written in plain language.

  • Define the measurement, the frequency and the person
  • State the corrective action for a deviation, including product disposition
  • Verify records weekly and keep evidence of that verification

Recall readiness is tested, not described

Expect the auditor to pick a finished pack and ask you to trace back to the field and forward to the customer within a set time, then reconcile quantities. Run mock recalls at least annually and record the timings honestly, including what went wrong.

Train the team that will be interviewed

Auditors interview operators, not managers. Refresher training for line staff on their specific CCP is the single highest-return preparation activity before an audit.
